Ingredients:
1 can chickpeas or 2 cups homemade chickpeas
1 tablespoon coconut oil
1 teaspoon thyme
Preparation:
1. Preheat oven to 265ºF.
2. Drain the chickpeas and rinse well. Dry chickpeas on a kitchen towel.
3. Finely mince the thyme.
4. In a medium size bowl, mix the chickpeas with the oil and thyme.
5. Put chickpeas in one layer on a parchment paper lined baking sheet and bake for 45 to 55 minutes until very crunchy.
